We love feta. We always have. When we were kids, our parents would regularly host friends and family and our apartment would be busy with chatter, laughter and food. Whether it was going to be a big feast or a small and quaint buffet, one thing we always looked for was the feta. We were never disappointed.

Our parents served feta in a variety of ways. It was definitely incorporated into recipes like Greek salad or tyropitakia, and sometimes it was the star ingredient as it is in baked feta wrapped in phyllo. Feta is delicious no matter how it is served. We even loved it when feta pieces were drizzled with olive oil and sprinkled with a generous amount of dry oregano. Feta this way was always presented in the same.glass dish which we realized years ago was actually a banana split bowl, that never saw a banana split. Greek parents of that generation do not do banana splits. Ice cream was pretty much only Neopolitan.

One of our favourite ways to serve up feta, to go along with our 20 other favourite ways to serve up feta, is to bake it and then drizzle it with honey which then gets caramelized during a short broil in the oven. Baked feta with honey is a gluten-free way to enjoy the lusciousness which is baked feta. Although not a very melty cheese, feta gets beautifully soft and a little creamy when it warms up, making it perfect for spreading on pita, crackers or slices of baguette. Of course, if you want to keep this appetizer gluten-free use gluten-free pita, crackers or baguette. You can also just scoop it up with a spoon and make no apologies!


Helpful hints

Choose the best feta for your baked feta with honey.

The best feta is a Greek feta. Greek feta is made with sheep or goat milk, or a combination of the two. It is a far superior product than feta made with cow’s milk. Try to purchase Greek feta, even it if means you have to order it online.

Substitute the mint with another fresh herb.

The mint here is phenomenal. The mint reminds us of the kalitsounia we had in Crete where some of the little fried cheese pies have mint mixed into them. Perhaps that is what inspired our parents to top their baked feta with honey with some finely chopped fresh mint. Whatever the reason, it is a delicious result.

If you prefer not to have mint you can substitute it with fresh thyme – that would also be pretty lovely.

Add as much chili flakes as you like to your baked feta with honey.

We love to add chili flakes to our food, and especially like how it pairs with feta. You may have noticed this combination in our fried phyllo wrapped feta – similar flavours as you find in this recipe, but different enough that we think it is totally acceptable to serve both recipes at your next get together!

Baked feta with honey

Ingredients

  • 7 ounces Greek feta piece should be of uniform width
  • 1 tsp olive oil, plus more for oiling the pan
  • 2 tbsp honey plus more for drizzling
  • 1/4 tsp red chili flakes or to taste
  • 1/4 tsp fresh mint, chopped

Instructions

  • Preheat your oven to 400 degrees Fahrenheit.
  • Pat your feta as dry as possible. Lightly oil the entire base of your small casserole dish, or any oven-safe baking pan.
    7 ounces Greek feta
  • Place your feta in the middle of your baking dish, and lightly brush the top of your feta with about 1 teaspoon of olive oil.
    1 tsp olive oil, plus more for oiling the pan
  • Bake on the center rack of your oven until the feta is warm and soft around 10 minutes. Your feta will not melt.
  • Remove the feta from the oven. If there is a lot of liquid on the bottom of your pan soak it up carefully with a paper towel. Careful not to burn yourself.
  • Set your oven to broil.
  • Drizzle enough honey to cover the entire top of the feta. You will likely need at least two tablespoons of honey. Place back in the oven. Broil for about 5 minutes, checking it every couple of minutes. (Every oven is different, so watch your cheese carefully). Your edges of the feta, and part of the top, will become nice and golden.
    2 tbsp honey
  • Remove your baking pan from the oven and drizzle the top of your feta with some additional honey. Add the red chili flakes and chopped up mint.
    1/4 tsp red chili flakes, 1/4 tsp fresh mint, chopped
  • Serve immediately with some fresh bread and enjoy! Keep in mind, that the serving pan is very hot.

Notes

This is best enjoyed soon after it’s made; the feta will firm up again as it cools.  If you have leftovers (highly unlikely),  you can return it to the oven to soften it back up.
We suggest you serve the feta in whatever dish you bake it in.  If you try to transfer it to a serving dish, it will very likely fall apart.  The feta is rather delicate after baking.

    OMG!!! made this baked feta with honey as a snack. It was absolutely beyond fantastically delicious❣❣❣❣ The mint and the chili flakes complimented this dish with extraordinary flavor❣❣❣❣ I used stale tsoureki bread and was a great choice. Couldn’t stop eating it, so I added some of this into my 2 beaten eggs for a spectacular Greek Omelet (talk about Heavenly)❣❣❣❣ ABSOLUTELY SOOO WORTH MAKING THIS DISH!! Will definitely be making this more often. Thanks again.
