Part whole wheat flour bread with honey is a quick, easy and slightly sweet bread made with a combination of all-purpose and whole wheat flour.


It was incredible to see social media taken over by hoards of people who had become sourdough bread experts during the COVID-19 pandemic related lock-downs and quarantining. Incredible! Impressive! Inspiring! Many of these loaves were works of art, and the artist (that is, home bakers) were appropriately proud of their accomplishments, and their improvements, loaf after loaf.

As far as the sourdough craze goes, we remain bystanders, fully admiring the fruits of other people’s labours. Although we may one day try our hand (again) at sourdough making, for now we’ll stick to the easier method using dry yeast and very little effort.

Quick and easy breads are a wonderful thing; they make any meal more complete and so much more special. Just the other day one of us had a particularly horrid day, and the other one of us offered to make dinner and to deliver it. How grateful the run-down, tired and overwhelmed sister was!! On the menu was fakes (yum!) and a surprise loaf of this part whole wheat flour bread with honey, freshly baked and delivered wrapped in a kitchen towel to keep it warm. Dinner delivery went from being So nice! Thank you to Oh my goodness!!! That is SO nice!! Thank you, thank you, thank you!!

Helpful hints

Your recipe indicates using a hand held mixer or a stand mixer. What if I don’t have either?

You can certainly do the mixing and the kneading by hand. The mixer is not essential, it just makes the job easier. If you don’t have a mixer, don’t despair. Make the bread anyways – it’s still easy, and it will still be delicious.

Are you sure you want we dump all the ingredients together in a bowl right away? That seems like a weird technique!

Yes, we mean it, and yes, it is a bit weird. Well, not weird exactly, just unusual. We actually adapted this recipe, and technique from Linda over at The Wanderlust Kitchen. It’s a great way to make bread, and you can find the recipe which inspired this one by clicking here.

I’m a vegan and don’t eat honey. What can I use as a substitute?

The honey can be substituted with equal parts molasses, maple syrup or even sugar. All three would be fine substitutes.

Part whole wheat flour bread with honey

A quick and easy bread made with a combination of all-purpose and whole wheat flour, sweetened with honey.

Equipment

  • Stand mixer or hand held mixer

Ingredients

  • 1 3/4 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 1 1/2 teaspoon dry yeast
  • 1 cup warm water
  • 2 teaspoons honey
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil, plus more for greasing the bowl

Instructions

  • Add all of the ingredients (except for the extra oil that will be used to grease your bowl) to the mixing bowl of your stand mixer and using a rubber spatula mix them well to combine. (If you will be using a hand-held mixer, use any large mixing bowl)
  • Let the mixture sit at room temperature for 10-15 minutes.
  • Use the dough hook attachment of your stand mixer, or of your hand-held mixer, and mix for approximately 5 minutes. If your dough sticks to the side of your bowl add a little more flour.
  • Place the dough in a well oiled bowl, cover with a clean kitchen towel and let rise in a warm place for 1 hour.
  • Punch down the dough and shape it into a loaf. Place the dough on a parchment lined baking sheet, and let rise, loosely covered, for an additional hour, in a warm place. For help on how to shape the bread, watch this video.
  • Heat your oven to 400 degrees Fahrenheit.
  • Lightly sprinkle the top of the loaf with a little bit of flour and lightly score the bread 3 times, as shown on picture above, with a serrated knife. You can also use a blade if you happen to have one.
  • Bake in the middle rack of your oven for 30 minutes
  • Let cool on a wire rack before slicing.
  • Enjoy!

    whole wheat flour and my tummy do not like each other can i use all unbleached plain flour

      Hi Ann! Yes, you can replace the whole wheat, with 1 cup of all purpose flour. So for this recipe, you’ll need 2 3/4 cups All purpose flour. Hope this helps 🙂
